Waveroo Country

Commercial, Hospitality

Completed 2021

Our client sought to expand their shopfront bakehouse, located in a commercial, heritage precinct into a new, state-of-the-art bakery facility.

The project involved complex resolution of heritage impacts, implementation of an ‘industrial use’ in a commercial zone, delivery access from a pedestrian laneway and sound, light and refuse concerns from neighbouring properties.

Our approach to this project was to deliver a built outcome that would meet to client’s aspirations for a contemporary bakery located within a heritage listed building and street.

Our design response addressed the relocation of the bakery from the existing building to an innovative new building at the rear of the block. This was required to free up the existing shopfront for increased dining experiences and to improve visibility of the day to day operation of the bakery and coffee roastery.
